Kombucha is a long history of functional beverages, retrieve relevant literatures, this text mainly goes to review from biomass composition of Kombucha, nutrition, training methods, separation and purification of microorganisms in Kombucha, fermentation mechanism, health care functions and the mechanism of roles aspects, looks ahead the future development and utilization of Kombucha and proposes presented problems to be solved.
